Ingredient:

Cocoa mass, Sugar, Cocoa butter, Cocoa powder, Emulsifier: Soya Lecithin (INS No. 322), Natural vanilla flavour.

Allergen information: Contain allergen soya. Manufactured using equipment that also processes tree nuts, milk, soya, gluten and egg.

Direction of Use

  1. Put the chocolate button in the stainless bowl.
  2. Place a bowl over a pot of simmering water (au bain marie). Keep water hot, but avoid overheat and the water/steam does not get into the chocolate.
  3. Stir with spatula until chocolate melt it down at temperature: 40–45 ºC.
  4. Mix the liquid chocolate slowly and divide it into 2 part, comprise of 3/4 and 1/4 part. Each of them isplaced in the stainless-steel bowl
  5. The first one: mix and make it cool to 27 - 28 ºC
  6. The second one: mix and there is no cooling treatment
  7. Pour the second part of chocolate to the first one, continue to mix, until temperature of mixture get 29 – 31 ºC (working temperature)
  8. The melted chocolate is ready to use as needed
